Food Allergy & Intolerance Testing

The Stouffville Natural Health Clinic employs the latest in scientific allergy testing to determine those allergies that are often hard to detect or are missed on standard skin prick allergy tests. When foods create an adverse reaction in our bodies, all levels of health are disrupted.



What is a Food Allergy vs. Intolerance?

The immune system defends the body against bacteria, viruses and any other organism or compound (food) it deems harmful. One of the ways it does this is by producing cells called immunoglobulins, also called antibodies. There are five major immunoglobulins: IgA, IgD, IgE, IgG, and IgM.



Food Allergy

Only IgE reactions are considered true food allergies. IgE reactions typically occur within minutes of exposure to, or ingestion of, a food antigen. Commonly observed IgE reactions include: hives, itchy watery eyes and breathing difficulties. These reactions are associated with anaphylaxis reactions.



Food Intolerance / Sensitivity

A Food Sensitivity is a term that usually refers to a delayed immune reaction to a food. For example, IgG and IgA reactions to foods are commonly referred to as food sensitivities. IgG food sensitivities are implicated in migraine headaches, irritable bowel syndrome, joint pain, asthma, eczema, psoriasis, weight gain and behavioural issues. IgG food reactions take hours or days to develop. This can make it difficult to determine which food is responsible for the reaction without testing.



Rocky Mountain Analytical Testing

Rocky Mountain Analytical is an accredited laboratory in Calgary that offers comprehensive food testing in order to isolate allergies and intolerances. This lab also offers a unique variety of other testing that is available through our clinic.



Celiac Profile

The Celiac Profile measures several antibodies (most importantly IgG and IgA) reaction to Gliadin, a protein found in wheat gluten. If elevated, this indicates gluten sensitivity or possibly celiac disease.



Candida Panel

The Candida Panel measures levels of IgG, IgA and IgM antibodies to Candida plus Candida antigen in a blood strip sample. Measurement of Candida antigen in blood indicates widespread infection, which can occur in immuno-compromised individuals.



Food Sensitivity Testing

Food sensitivies are delayed reactions to specific foods that are triggered by IgG antimbodies. In an IgG reaction, the IgG antibodies attach themselves to the food antigen and create an antibody-antigen complex. These complexes are normally removed by special cells called macrophages. However, if they are present in large numbers and the reactive food is still being consumed, the macrophages canít remove them quickly enough.
